This recipe passes all of my qualifications for an excellent recipe, and with flying colors!
- It’s shockingly quick– it took me only about 10 minutes from brainstorming and playing around with ingredients, until the time it went in the oven.
- Short, simple ingredient list– Except when in a particular mood, I generally hate long, involved recipes that find me darting around the kitchen, throwing open cabinets for “a little of this, a little of that.” This recipe is reliably simple to pull together, and you most likely have the ingredients on-hand.
- Exceptionally good-tasting– these brownies are unbelievably delicious. they tasted even better the next day (and I even forgot to place them in an airtight container!)
- Of course, it needs to meet my healthy-mama requirements. This is flourless, sugar-free, and absent of any garbage substitutes or fillers. Everything in here is real food, that honestly comes together into a healthy dessert.
There is actually no flour used in this recipe. The base is nut butter- I used a crunchy one with seeds in it from Nuttzo, but I’m sure any nut butter would work. Just keep in mind that peanut butter will lend its own strong flavor.
I started with nut butter mixed with coconut sugar, then gave it more of a shape+stretch with tapioca flour. You can use either arrowroot or tapioca, either is fine. Then just added in some more flavors from there!
- Vanilla extract
- cocoa
- coffee
- Pink Himalayan salt
The batter comes together effortlessly, and you just place it in the oven! Take it out when done, and try not finish off the whole thing in one sitting. So delicious and simple!
