Turmeric makes these cookies a vibrant yellow color, but also adds detoxifying and anti-oxidant benefits. (You might want to wear gloves while handling the dough!)
Together with the cocoa, the colors make for a striking combination. The cookies look complicated to make, but are actually relatively easy to throw together. The base is cassava flour, which makes for a crunchy, almost-glutinous texture.
Because of their yellow-brown swirl and the crumbly texture, these remind me of the “chinese” marble cookies we used to get from a local bakery, years ago. Those ones had a circle of chocolate in the middle, which was delicious, but I didn’t have dark chocolate around to melt when making these.
