This egg bake is going to be a perfect breakfast idea for you if you appreciate easy, make-ahead, and customizable dishes.
To be honest, I’ve been struggling with breakfast lately.
I do not waver in my impassioned belief that eating healthy, unprocessed, whole foods is hands-down the best investment you can make in your health, and your children’s health.
BUT- sometimes, just sometimes, I envy other moms who do a 1-second, no-sweat breakfast, like just pouring a bowl of cereal or heating up frozen waffles or something.
A lot of us moms interested in healthy living actually DO enjoy cooking, and I fall squarely in that camp, as you can probably tell.
So it’s not that eggs or chicken for breakfast intimidates or annoys me, it’s just that there’s no time to start perspiring over the stove in the morning, am I right?
So, long story-rant truncated– that’s why I’m hoping this little egg bake, which can be made ahead, will take some of the sweat out of healthy breakfasting.
I so appreciated stumbling across this basic method, in the course of my endless kitchen fumblings. Would you believe that it was actually a rushed lunch endeavor that prompted its creation, not even breakfast?
But now that I have this up my sleeve, it’s going to be making breakfast appearances constantly until the Fam becomes bored of eggs.
It’s a great method to adopt into your cooking rotation, mainly because you can serve it again and again, but with changes that make it unique each time.
This recipe is SO flexible that it’s barely even a recipe- think of it as a basic “skeleton” that you can then embellish to your liking.
How to Customize the Egg Bake:
You can literally spin this any direction you please. Depending on what you currently have in your fridge and pantry, as long as you also have some eggs then I guarantee you can make some variation on this- and it can then serve as the main or side dish at a family meal.
Some ideas on how to make this your own:
- If you’re not as big of a garlic lover as I am, cut back on the garlic.
- Add greens, like spinach o arugula.
- Stir in any cooked veggies you have in the fridge: sweet potato cubes, carrot, zucchini, tomato, and olives would all taste great.
- Make it a cheesy quiche and bake it in a pie crust
- Mix in chunks of feta cheese, or sprinkle some grated parmesan cheese on top.
