You’re going to want to share this recipe with all of your paleo and vegan friends, because it’s easy, delicious, and looks like you spent all day on it! It’s made of simple, real-food ingredients: raw honey, cassava flour, avocado oil, and a handful more you likely have stocked already.
This pie is sweet, but balanced perfectly by autumnal spices. It has a great texture- piece-y and crumbly, jut slightly gooey at the very bottom (my favorite part!) There’s also a nice crunch on the bottom of the crust from being cooked in cast iron, but you can bake this in any pan you’d like.
I wasn’t intentionally setting out to make this vegan, but it actually works perfectly without the eggs. The only thing I would suggest for those of you who are fine with eggs and want the option- you can brush a bit of egg over top so that the crust browns up in the oven.

Back to the apple pie itself: I used a cookie-type of crust. So we’re talking sweet, crumbly, cinnamon-y, dense. But don’t worry, it still holds together fairly well. As any of you Paleo people know, that’s no small accomplishment for GF baking!

it might seem like there are numerous steps involved, but I was honestly surprised by how little of a hassle this entire endeavor proved to be. It’s just one dough, which you use for bottom and top, and then the apple layer which is SO easy.
Here is a photo of the raw pie crust before assembling with filling. I used a simple thumb-and-forefinger pinch all around the perimeter.
And below, see how beautiful the pie looks when all assembled but before baking! As you can see, not all of my apples were perfectly covered but it really doesn’t matter.
