Never did I think I’d be the type of person to make blueberry muffin-top cookies (even if they are paleo). To be honest- I don’t really like muffins.
Yep. Muffins, I’m ashamed to say, are a baking personality that have yet to darken the door of my kitchen.
Cookies are totally up my alley. Case in point: N’Oatmeal Chewy Cookies, Marbled Turmeric Cookies, and a roundup of healthy packaged snacks that includes, well, a lot of cookies.
My theory though? I think the carb-ivore still living inside me somewhere prefers baked goods with really good texture and chew. Muffins are just too airy, y’know what I mean?
Well, be assured that this recipe straddles the horses of both camps.
Cookie lovers: think of this as your caramelized, textured, chewy venture into muffin-land.
And muffin lovers: It’s like someone reserved you all the muffin-tops of your favorite blueberry muffin!
Process of Making Paleo Blueberry Muffin Tops
Process: In the spirit of all tired bakers out there, let’s not make this any more complicated than a classic “Mix, Shape, & Bake.”
Tools: In the way of equipment, all you need is:
- Large Bowl
- Spoon/Spatula for Mixing
- Baking Sheet
- Parchment Paper (unbleached, please!)

Paleo Blueberry Muffin-Tops: A Light Analysis
The recipe is actually a slight variation on a recipe I’ve been using for a while for just regular cookies.
Another variation: My Hanukkah shaped cookies, which can really be shaped into anything you like.
However, I think the blueberry explosions in it added a nice amount of moisture and a burst of flavor. Hence they were graduated from squarely “cookie” territory into squarely “muffin” territory.
^I’m sorry, but does that not look like you’re peering down at the tops of an actual tray of muffins? The muffin-top texture is legit in this paleo version.
